Chicken and Pasta Primavera

I found this recipe for Chicken and Pasta Primavera while browsing on the Campbell's Kitchen website. It looks so yummy and fairly easy to make. Also, it isn't too incredibly bad for you either.


Ingredients:

-1 can (10 and 3/4 ounces) Campbell's Healthy Request Condensed Cream of Mushroom Soup

-1/2 cup milk

-3 tablespoons grated Parmesan cheese

-1/4 teaspoon garlic powder

-1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower, carrots)

-2 cups cubed cooked chicken

-1/2 of a 1 pound package of spaghetti, cooked without salt and drained

Directions:

-Heat the soup, milk, cheese, garlic powder, and vegetables in a 3-quart sauce pan over medium heat to a boil.

-Reduce the heat to low.

-Cover and cook for 10 minutes or until the vegetables are tender-crisp.

-Stir the chicken into the saucepan and cook until the mixture is hot and bubbling.

-Serve the chicken mixture over the spaghetti.

Pot Sticker Salad

I found this recipe at the website Real Simple, and it looks so amazingly good. I love how few ingredients it has and how simple it seems to prepare. I love pot stickers as well, but they get boring just as an appetizer or meal. I think this might also be good without the pot stickers, and with some marinated chicken or beef instead.


Ingredients:
-1, 1 pound bag of frozen pot stickers

-3/4 pound sugar snap peas, trimmed (about 4 cups)

-2 medium carrots, sliced

-1/2 cup low-sodium soy sauce

-1 tablespoon sesame oil

-1/4 pound bean sprouts (about 1 and 1/2 cups)

-1/4 cup roasted peanuts, chopped

-2 scallions, sliced

Directions:
-Fill a large saucepan with 1 inch of water and fit with a steamer basket (or fill a large skillet with 1/2 inch of water). Bring the water to a boil. Place the pot stickers in the basket (or skillet), cover, and steam for 4 minutes.

-Add the snap peas and carrots, cover, and steam until the pot stickers are cooked through and the vegetables are tender, 4 to 6 minutes.

-Meanwhile, in a small bowl, combine the soy sauce and sesame oil. Divide the bean sprouts among bowls and top with the pot stickers and vegetables. Sprinkle with the peanuts and scallions. Serve with the sauce.

Preface

I decided to start this blog to keep track of all the recipes I want to try. I have a million bookmarked recipes that are slowly taking over my bookmark list, and this way they can stay a little more organized. I also frequently come across recipes I want to try on different blogs and then when I want them, I can't remember where they came from. I'll try to update with how a recipe went once I try it, but I don't get to cook that often so don't expect that too much! :) If you happen to try a recipe I post before I do, let me know how it goes!
